Make a savory surprise stuffed in a crusty cob loaf for a perfect picnic treat.
Ingredients:
  • 450g white Aussie damper cob loaf
  • 300g fresh ricotta
  • 40.00 ml chopped fresh basil
  • 40.00 gm basil pesto
  • 300g chargrilled capsicum
  • 300g sliced ham
  • 40g baby spinach leaves
Instructions:
  • Remove the top of the cob and set aside. Carefully hollow out the inside of the cob, leaving a 1 cm border of bread against the crust.
  • Mix the ricotta and basil together, then set aside. Spread the interior of the cob with the basil pesto.
  • Begin by arranging half of the capsicum slices, followed by the ham and spinach inside the loaf. Spread the ricotta mixture evenly over the layers. Finally, layer the remaining spinach, ham, and capsicum on top (press gently to ensure everything fits without cracking the loaf).
  • Reattach the top of the cob and tightly wrap in foil. Chill overnight. Cut into wedges for your picnic.
