PHILADELPHIA Vanilla Mousse Cheesecake

Bake vanilla cheesecake on wafer crust, top with cream cheese, whipped topping, and vanilla for a special, elegant dessert.
Ingredients:
  • 40 NILLA Wafers, crushed
  • 3 tablespoons butter or margarine, melted
  • 4 (8 ounce) packages PHILADELPHIA Cream Cheese, softened, divided
  • 1 cup sugar, divided
  • 4 teaspoons vanilla, divided
  • 3 eggs
  • 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed
Instructions:
  • Preheat oven to 325°F.
  • Combine wafer crumbs and melted butter, then firmly press the mixture onto the bottom of a 9-inch springform pan.
  • In a mixing bowl, combine 3 packages of cream cheese, 3/4 cup sugar, and 1 tablespoon of vanilla. Beat with a mixer until smooth. Add eggs one at a time, mixing on low speed just until incorporated. Pour the mixture over the crust.
  • Bake for 50 to 55 minutes until the center is almost set. Gently run a knife around the edge of the pan to release the cake, then let it cool completely in the pan.
  • In a large bowl, blend the remaining cream cheese, sugar, and vanilla using a mixer until smooth. Gently fold in the COOL WHIP and spread the mixture over the cheesecake. Refrigerate for 4 hours. Just before serving, carefully remove the rim of the pan.
