Philly Beef and Cheese Sandwich

Easy Philly beef and cheese sandwich made with Bisquick® mix - a delicious dinner option!
Ingredients:
  • 1 medium bell pepper, cut into strips
  • 1 medium onion, thinly sliced
  • 4 cups Original Bisquick™ mix
  • 2 cups milk
  • 2 tablespoons mayonnaise or salad dressing
  • 2 eggs
  • 1/2 pound thinly sliced cooked roast beef
  • 1/2 pound sliced Swiss cheese
Instructions:
  • Preheat oven to 350°F. Grease a 13x9x2 inch rectangular baking dish with shortening. Spray a 10-inch skillet with cooking spray and heat over medium-high heat. Sauté bell pepper and onion in the skillet until tender; then remove from heat.
  • Mix together Bisquick, milk, mayonnaise, and eggs until combined. Pour half of the batter into a baking dish. Layer with half of the beef, the bell pepper mixture, and three-fourths of the cheese. Add the remaining beef on top. Pour the rest of the batter over the beef.
  • Bake without a cover for 35 to 45 minutes until beautifully golden. Sprinkle the remaining cheese on top. Rest for 5 minutes before slicing.
