Cheesy, meaty, and saucy mashup of sloppy joes and Philly cheesesteaks - a delicious twist on two classics!
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 small white onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 pound lean beef, 90/10 blend
  • 1/2 cup beef stock
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 12 slices provolone cheese, divided
  • 6 brioche buns, store-bought or homemade
Instructions:
  • In a large skillet over medium heat, melt butter. Add onions and bell peppers. Cook for 6 to 7 minutes until softened, stirring often. Ensure vegetables are soft without browning.
  • Brown the ground beef in a skillet, using a wooden spoon to break it up into small pieces as it cooks. This should take 5 to 6 minutes.
  • Incorporate the stock, ketchup, Worcestershire sauce, garlic powder, salt, and black pepper, simmer on low for 4 to 5 minutes until thickened. Slice 6 provolone cheese slices into 1/2-inch pieces on a cutting board. Just before serving, add the cheese.
  • For the perfect sloppy joes: Toast the brioche buns until golden. Layer each brioche bun half with 1 slice of provolone cheese. Add a generous scoop of the sloppy joe mixture on top and finish with the other half of the bun. Serve while warm. Enjoy any leftovers by storing them in the fridge for 4 to 5 days or freeze in a freezer-safe container for up to 3 months. To reheat, use the microwave or a skillet with a splash of water or stock.
