Philly Cheesesteak Egg Rolls

Whip up quick and delicious beef egg rolls for a family-friendly meal in no time!
Ingredients:
  • 1 package (17 oz) beef roast au jus
  • 1 tablespoon vegetable oil
  • 1 cup sliced fresh mushrooms (3 oz)
  • 1 medium onion, halved, thinly sliced (1 cup)
  • 1 green bell pepper, cut into thin strips
  • Vegetable oil for deep frying
  • 8 egg roll skins (from 1-lb package)
  • 1 egg, slightly beaten
  • 8 slices (1 oz each) smoked provolone cheese
Instructions:
  • Prepare the beef roast according to package instructions. Once cooked, drain, allow it to cool, and then shred the meat. Save the flavorful au jus for another recipe.
  • Heat 1 tablespoon of oil in a 12-inch skillet over medium-high heat. Cook mushrooms, onion, and bell pepper for 8 minutes until tender, stirring occasionally. Remove from heat and stir in shredded beef. Let it cool to room temperature.
  • Heat oil in deep fryer or 4-quart Dutch oven to 350°F. Lay 1 egg roll skin on work surface with a corner facing you. Brush edges with beaten egg, place 1 slice of cheese on top. Spoon 1/2 cup beef filling slightly below the center. Fold corners over filling, tuck the point under. Fold and overlap right and left corners, brush remaining corner with egg, roll egg roll towards it and press to seal. Place seam side down on a plate. Repeat with remaining ingredients.
  • Fry a few egg rolls at a time in oil for 3 to 5 minutes, flipping once, until they turn golden brown. Place on paper towels to drain, then serve while warm.
