Piña colada fro-yo

Whip up this quick and healthy tropical fro-yo for a perfect summer treat!
Ingredients:
  • 250 g Greek-style coconut yoghurt
  • 500 g frozen chopped tropical fruit, such as pineapple, mango, banana
  • 75 g dried tropical fruit
  • 4-6 ice cream scones
Instructions:
  • Blend the yoghurt and frozen fruit in a food processor until smooth. Finely chop the remaining dried fruit and gently fold most of it into the mixture, reserving some for topping. Transfer the mixture to a piping bag with a large star-shaped nozzle and freeze for approximately 30 minutes, until it firms up slightly. Pipe the fruity fro-yo into ice cream cones and sprinkle the reserved dried fruit on top.
