Try these mouthwatering curried pork pies - a delicious twist on a classic favorite, made easy with a pie maker.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, chopped
  • 500g pork mince
  • 3.75 gm curry powder
  • 44.40 gm tomato paste
  • 20.00 ml plain flour
  • 125ml (1/2 cup) Chicken Style Liquid Stock
  • 160g (1 cup) grated pumpkin
  • 75g (1/2 cup) frozen peas
  • 4 sheets frozen puff pastry, just thawed
  • Ketchup, to serve
Instructions:
  • In a large deep frying pan over medium heat, warm the oil. Sauté the onion until just softened, about 3 minutes. Add the pork mince and cook until lightly browned, breaking up any lumps with a wooden spoon. Stir in the curry powder.
  • Combine tomato paste into the mixture by stirring until well mixed. Sprinkle flour over the mixture and combine by stirring. Pour in the stock and stir until the mixture thickens. Add pumpkin and peas, cook for 5 minutes. Season to taste. Transfer to a large bowl and let it cool fully.
  • Cut 8 large and 8 small circles from the pastry dough using the pastry cutter. Grease the pie maker lightly, then press 4 large dough circles into the pie holes. Fill each with a slightly heaped 1/3 cup of pork mixture. Place the 4 small dough circles on top. Turn on the pie maker, close it, and cook for 8-10 minutes until the pastry is golden.
  • Continue with the remaining pastry and mince, cooking for 6-8 minutes until golden and crispy. Enjoy the hot pies with a side of ketchup.
