Pie maker taco cups

Make mini tacos in a pie maker for a versatile and crowd-pleasing dish that is ideal for any meal or party spread.
Ingredients:
  • 2 x 220g cans Baked Beanz No Added Sugar
  • 125g can corn kernels, drained
  • 1/2 red capsicum, deseeded, finely chopped
  • 20.00 ml chipotle in adobo sauce, finely chopped
  • 10 mini flour tortillas
  • 80g (1 cup) coarsely grated light cheddar
  • 150g thick natural yoghurt
  • 1 long fresh green chilli, deseeded, finely sliced
  • Lime wedges, to serve
  • 2 tomatoes, deseeded, finely chopped
  • 20.00 ml chopped fresh coriander leaves
  • 1/2 red onion, finely chopped
  • 21.00 gm fresh lime juice
Instructions:
  • Mix together the baked beans, corn, bell pepper, and chipotle in a large bowl.
  • Combine all the flavorful salsa ingredients in a separate bowl.
  • Cut 4 discs from 4 tortillas using an 11cm round pastry cutter. Microwave the tortilla discs on High for 20 seconds to slightly soften them. Press the discs into the holes of a pie maker and cook for 3 minutes until the tortillas start to become firm.
  • Fill taco cups with delicious baked bean mixture, top with cheese, and cook in pie maker for 8 minutes until cheese is melted and golden. Keep warm by covering with foil on a plate. Repeat with remaining tortillas, bean mixture, and cheese to enjoy 10 tasty taco cups.
  • Garnish each taco cup generously with yogurt, salsa, and chili, then season to taste and serve with lime wedges.
