Irresistible pineapple-coconut fruit jellies - a tropical twist on a classic treat.
Ingredients:
  • 1 cup granulated sugar
  • 0.75 cup Mott's® Natural Applesauce
  • 1 (3 ounce) package pineapple-flavored gelatin mix (such as Jell-O®)
  • 1 (.25 ounce) package unflavored gelatin
  • 3 teaspoons freshly squeezed lime juice
  • 0.75 teaspoon coconut extract
  • 0.5 cup granulated sugar for coating
Instructions:
  • Coat an 8x8-inch baking dish with non-fat cooking spray and chill in the refrigerator.
  • In a saucepan, mix together granulated sugar, applesauce, pineapple-flavored gelatin, unflavored gelatin, lime juice, and coconut extract.
  • Bring the mixture to a gentle boil over medium heat, stirring constantly for about 1 minute. Then, remove the saucepan from the heat and allow it to cool at room temperature for approximately 10 minutes. Be careful not to pour the hot liquid directly into a chilled glass dish.
  • Take the chilled baking dish out of the refrigerator and gently transfer the warm mixture into it. Place the dish back in the refrigerator and let it chill until it becomes firm, which usually takes 1 to 2 hours.
  • Take the chilled mixture out of the refrigerator, use a spatula to gently lift one side, and flip it onto a cutting board or parchment paper that has been sprinkled with granulated sugar.
  • With a sharp knife, slice the gelatin into squares or use a small cookie cutter for fun shapes. Roll the jellies in sugar until all sides are coated. Place them on a rack to air dry overnight.
  • Transfer to an airtight container for storage.
