Delicious pineapple and coconut muffins with a hint of rum.
Ingredients:
  • 1 cup sour cream
  • 0.5 cup white sugar
  • 0.25 cup margarine
  • 1 large egg
  • 1 teaspoon rum flavored extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 (15 ounce) can crushed pineapple, drained
  • 0.5 cup flaked coconut
Instructions:
  • Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin pan with paper liners.
  • Combine sour cream, sugar, margarine, egg, and rum extract in a large bowl, and mix with an electric mixer until silky smooth.
  • In a medium bowl, combine flour, baking powder, baking soda, and salt. Mix the flour mixture into the wet ingredients, then gently fold in the drained pineapple and coconut. Spoon the batter into the muffin cups.
  • Bake in the oven that's all warmed up until the tops bounce back gently when tapped, about 20 to 25 minutes.
  • Take out of the oven and allow to cool on a wire rack.
