Escape to the tropics with this easy pineapple and coconut ice cream, perfect for summer gatherings.
Ingredients:
  • 625.00 ml chopped fresh pineapple
  • 62.50 ml mint leaves
  • 250g cream cheese, softened
  • 75g caster sugar
  • 125ml coconut cream
  • 225g Brand Madeira Cake, cut into 1cm cubes
  • Moist coconut flakes, toasted, to serve
  • Pineapple, extra, cut into wedges, to serve
Instructions:
  • Pulse pineapple and mint in a food processor until finely chopped.
  • Beat cream cheese and sugar with an electric mixer until smooth, about 2-3 minutes. Mix in coconut cream and beat for an additional 2 minutes until smooth.
  • Layer one-third of the cream cheese mixture into four 1 cup (250ml) serving glasses. Add half of the cake, then half of the pineapple mixture. Repeat layering with remaining ingredients, ending with cream cheese mixture on top. Chill in the fridge for at least 2 hours or overnight before serving.
  • Garnish parfaits with shredded coconut and top each glass with a pineapple wedge.
