Family-friendly 5-ingredient summer dessert. Elevate with a rum-infused pineapple drizzle for an adult twist.
Ingredients:
  • 600ml thickened cream
  • 315g (1 1/2 cups) caster sugar
  • Pinch of salt
  • 2 tsp coconut essence
  • 1/2 pineapple, peeled, cored, chopped, plus extra, cut into wedges, to serve
Instructions:
  • In a saucepan, whisk together the cream, sugar, and salt over low heat until the sugar dissolves (avoid boiling). Add the coconut essence and stir well.
  • Pour the cream mixture into a spacious bowl and let it cool while giving it a gentle stir from time to time. Chill in the fridge for 3 hours until nicely chilled.
  • Beat the cream mixture with electric beaters until soft peaks form, then transfer it to an airtight freezer-proof container and seal. Freeze for 5 hours or until firm.
  • Next, add the diced pineapple to a food processor and blend until it becomes a smooth puree. Transfer the puree to a bowl, cover it, and refrigerate until needed.
  • Transfer the cream mixture into a piping bag with a 1.3mm star nozzle attached. Pipe it into serving glasses. Decorate with the pureed pineapple, garnish with extra pineapple wedges, and serve promptly.
