Pineapple Cake

Whip up a lusciously moist pineapple cake for a crowd-pleasing potluck dish!
Ingredients:
  • 2 cups all-purpose flour
  • 2 cups white sugar, divided
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 (20 ounce) can crushed pineapple with juice
  • 2 large eggs, beaten
  • 0.75 cup butter
  • 0.5 cup evaporated milk
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking pan.
  • In a mixing bowl, combine flour, 1 1/2 cups sugar, baking soda, and salt. Mix in undrained pineapple and eggs until fully incorporated. Transfer batter to the prepared pan.
  • Bake in the hot oven until a toothpick inserted in the center comes out clean, approximately 30 minutes.
  • In a saucepan over medium-high heat, blend butter, evaporated milk, remaining 1/2 cup sugar, and vanilla. Bring to a boil and simmer for 5 minutes.
  • Take the cake out of the oven and place it on a wire rack.
  • Drizzle the melted butter mixture onto the warm cake and allow it to cool for 30 minutes before enjoying.
