Pineapple cake with cream cheese pecan frosting - irresistible!
Ingredients:
  • 1 (20 ounce) can crushed pineapple, undrained
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 2 large eggs
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • 0.25 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 cup crushed pecans
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x9-inch square baking pan.
  • Combine pineapple, flour, sugar, eggs, baking soda, and vanilla extract in a large bowl. Use an electric mixer on medium speed to blend for about 1 minute until well combined. Transfer the mixture to the prepared pan.
  • Bake until a toothpick inserted in the center comes out clean, about 30-40 minutes. Let it cool slightly as you prepare the icing, around 20 minutes.
  • Combine cream cheese and butter in a bowl to make the icing. Add powdered sugar, pecans, and vanilla extract; mix until well combined. Spread the icing over the warm cake and refrigerate if not serving right away.
