Pineapple Lumps pina colada recipe

Elevate your favorite cocktail with Pineapple Lumps for a memorable Pina Colada twist.
Ingredients:
  • Bought chocolate sauce, to decorate
  • 100g dark cooking chocolate, broken
  • 185ml (3/4 cup) pineapple juice
  • 125ml (1/2 cup) coconut cream
  • 125ml (1/2 cup) thickened cream, plus extra, whipped, to serve
  • Pascall Pineapple Lumps, to serve
  • Thinly sliced fresh pineapple, to serve
  • 80ml (1/3 cup) white rum
  • 60ml (1/4 cup) chocolate liqueur
Instructions:
  • Drizzle chocolate sauce into a small saucer. Gently coat 2 cocktail glasses by dipping them into the sauce.
  • Combine dark chocolate, pineapple juice, coconut cream, and thickened cream in a small saucepan over low heat. Stir constantly for 5 minutes until smooth and well combined. Allow to cool before using.
  • Cut the Pineapple Lumps in half and thread them onto cocktail skewers. Slice the pineapples to place on the rim of cocktail glasses.
  • Combine the rum and liqueur with the chocolate mixture. Shake ice cubes in a cocktail shaker, then add half of the chocolate mixture, shake well, and pour into a glass. Repeat with the remaining chocolate mixture. Top with a dollop of extra cream and drizzle chocolate sauce around the rim. Garnish with pineapple slices and Pineapple Lump skewers before serving.
