Indulge in Venezuelan pineapple quesillo: a luscious custard dessert made with pineapple, condensed milk, and eggs.
Ingredients:
  • 1 (14 ounce) can sweetened condensed milk
  • 1.5 cups whole milk
  • 1 (13.25 ounce) can sliced pineapple in heavy syrup, syrup reserved
  • 1 tablespoon coconut-flavored rum (such as Malibu®)
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Combine the sweetened condensed milk and eggs in a bowl, then mix in the milk, 1 1/2 teaspoons of syrup from canned pineapple, and rum until well blended.
  • In a saucepan, heat the leftover syrup from canned pineapple until it bubbles and darkens slightly, about 2 to 3 minutes. Transfer the syrup to a custard dish, covering the bottom evenly. Arrange pineapple slices in the dish, then pour the milk mixture over the pineapple.
  • Bake until a toothpick inserted in the center comes out clean, approximately 1 hour in a preheated oven. Cool to room temperature, then refrigerate until chilled, at least 1 hour.
