Pineapple rum punch

Try a tropical punch without rum for a refreshing non-alcoholic twist.
Ingredients:
  • 500g pineapple
  • 161.25 gm caster sugar
  • 4 whole cloves
  • 3cm piece fresh ginger, peeled, coarsely grated
  • 0.63 gm ground nutmeg
  • 3 x 5cm strips lime rind
  • 42.00 gm lime juice
  • 312.50 ml white rum
  • 1 1/2 litres soda water, chilled
  • 125.00 ml fresh mint leaves
  • 750.00 ml ice-cubes
Instructions:
  • Finely chop 100g of pineapple. Thinly slice the rest and cut into triangles. Set aside.
  • In a small saucepan over medium heat, combine finely chopped pineapple, sugar, cloves, cinnamon stick, ginger, nutmeg, lime rind, juice, and 3/4 cup cold water. Stir and cook for 4 minutes until sugar dissolves. Bring to a boil, then simmer for 5 minutes until slightly thickened. Strain mixture into a bowl, discard solids, and let it cool completely.
  • Combine the syrup, rum, soda water, pineapple, mint, and ice in a jug, stirring gently. Serve right away.
