Baked sweet potato souffle with caramelized pineapple topping.
Ingredients:
  • 3 cups peeled, cubed sweet potatoes
  • 0.5 cup brown sugar
  • 0.25 cup margarine, softened
  • 0.25 cup milk
  • 0.25 cup margarine, melted
  • 1 cup crushed pineapple, drained
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 2-quart baking dish.
  • In a large pot, cook the sweet potatoes in water until tender. Drain and let them steam dry briefly. Mash the sweet potatoes in a bowl. Add brown sugar, 1/4 cup softened margarine, 3 eggs, vanilla extract, and milk. Beat until fluffy. Pour into a baking dish. Mix flour, 1/4 cup melted margarine, pineapple, white sugar, and 1 egg in a bowl. Spoon over the sweet potato mixture.
  • Bake until golden brown, about 40 minutes in the preheated oven.
