Festive family favorite side dish for holidays.
Ingredients:
  • 3 sweet potatoes
  • 0.5 cup crushed pineapple with juice
  • 0.25 cup packed light brown sugar
  • 3 tablespoons butter
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give a gentle greasing to a 9x13 inch baking dish.
  • Boil whole sweet potatoes in a large soup pot until tender. Then peel and dice into bite-sized pieces.
  • Combine sweet potatoes, crushed pineapple, light brown sugar, and butter in a baking dish.
  • Bake for 45 minutes until casserole is tender and any excess water has evaporated.
