Pistachio Fudge Cups

Decadent fudgy filling in a delicate cream-cheese crust.
Ingredients:
  • 1/4 cup butter or margarine, softened
  • 1 package (3 oz) cream cheese, softened
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1/4 cup powdered sugar
  • 2 tablespoons unsweetened baking cocoa
  • 1/2 teaspoon vanilla
  • 2/3 cup granulated sugar
  • 2/3 cup chopped pistachio nuts
  • 1/3 cup unsweetened baking cocoa
  • 2 tablespoons butter or margarine, softened
  • 1 egg
Instructions:
  • Preheat oven to 350°F. In a large bowl, use an electric mixer on medium speed to cream together the butter and cream cheese, or mix by hand with a spoon. Mix in the rest of the crust ingredients until thoroughly combined.
  • Take the dough and divide it into 24 equal pieces. Press each piece into the bottom and up the sides of ungreased mini muffin cups.
  • In a medium bowl, thoroughly combine all filling ingredients. Fill each cup with about 2 teaspoons of the mixture.
  • Bake for 18 to 20 minutes until filling springs back lightly when touched. Cool briefly, then gently remove from muffin cups with a knife and transfer to a cooling rack.
