Homemade pepperoni pizza cupcakes with customizable fillings, biscuit-like texture.
Ingredients:
  • cooking spray
  • 1.5 cups all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoons baking powder
  • 0.5 cup milk
  • 2 tablespoons milk
  • 0.33333334326744 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1.5 ounces diced pepperoni
  • 0.5 cup pizza sauce, for dipping
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare 9 cupcake wells by spraying with nonstick cooking spray or lining with paper liners that are also sprayed with nonstick cooking spray.
  • In a mixing bowl, blend together flour, sugar, salt, garlic powder, Italian seasoning, and baking powder. Create a well in the center.
  • Combine milk, oil, and egg in the center and gently mix. Use a fork or spatula to blend the wet ingredients with the dry ones. Fold in mozzarella cheese and pepperoni into the batter. Distribute the mixture evenly among the muffin cups.
  • Bake the cupcakes in the preheated oven for 13 to 15 minutes until they are lightly browned and cooked through. Let them cool in the pan for 1 to 2 minutes, then transfer to a cooling rack. Enjoy warm with pizza sauce for dipping, if desired.
