Easy-to-make pizza cupcakes, a fun twist on classic mini pizzas, perfect for snacking at game-day parties.
Ingredients:
  • 8 medium cherry tomatoes
  • 1 (11 ounce) can refrigerated pizza crust
  • 8 teaspoons shredded mozzarella cheese
  • 0.5 cup pizza sauce (such as Classico®)
  • 8 teaspoons finely chopped red onion
  • 0.5 cup shredded mozzarella cheese
  • 8 slices pepperoni, quartered
  • Italian seasoning to taste
  • red pepper flakes to taste
  • garlic salt to taste
Instructions:
  • Collect all the ingredients needed. Preheat the oven to 400 degrees F (200 degrees C) and generously coat 8 muffin tin cups with cooking spray.
  • Dice the cherry tomatoes and remove any excess liquid; set aside.
  • Flour your work surface lightly and effortlessly roll out the pizza crust into a generous rectangle. Cut out 8 circles from the dough using a 4-inch round cookie or biscuit cutter.
  • Place the dough circles in the muffin cups, gently pressing them to form the crust at the bottom and along the sides of each cup.
  • Place a generous teaspoon of mozzarella into each cup, followed by a dollop of rich and savory pizza sauce. Finish by layering on the vibrant flavors of tomatoes and red onions.
  • Place a generous tablespoon of mozzarella in each cup, then layer with pepperoni. Sprinkle with Italian seasoning, red pepper flakes, and garlic salt for a burst of flavor.
  • Bake in the oven until the cheese is bubbly and melted, for about 14 to 15 minutes. Remove and allow to cool in the tins for approximately 5 minutes before serving.
  • Transfer the pizzas from the tin to a serving plate and serve piping hot.
