Family-friendly pizza loaf, perfect for picnics or school lunches.
Ingredients:
  • 187.50 gm self-raising flour
  • 250.00 ml grated mozzarella
  • 3 green onions, thinly sliced
  • 12 slices Hungarian salami, cut into 1cm pieces
  • 125.00 ml pitted mixed marinated olives, halved, plus extra to serve
  • 125.00 ml semi-dried tomato strips, chopped
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
  • 62.50 ml finely chopped fresh basil leaves, plus extra leaves to serve
  • 4 eggs, lightly beaten
  • 56.88 gm light-flavoured extra virgin olive oil
  • 128.75 gm milk
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 7cm-deep, 9.5cm x 19.5cm loaf pan and line it with baking paper, ensuring the paper extends 2cm above the pan on all sides.
  • In a large bowl, combine flour, mozzarella, onion, salami, olives, tomato, parsley, and basil. Season generously and mix until fully combined.
  • Create a hollow in the center of the flour mixture. Incorporate egg, oil, and milk until just mixed. Transfer the batter to the prepared pan. Bake for 55 minutes to 1 hour until a skewer inserted in the middle comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy with additional basil leaves and olives on the side.
