Kid-friendly pizza pasta bake, perfect for leftovers!
Ingredients:
  • 9.20 gm olive oil
  • 1 large red onion, chopped
  • 3 rashers middle bacon, trimmed, chopped
  • 1000.00 ml penne rigate
  • 200g button mushrooms, sliced
  • 1 medium green capsicum, chopped
  • 700g jar tomato pasta sauce
  • 40.00 ml chopped fresh basil leaves
  • 332.50 ml grated pizza cheese
  • Salad leaves, to serve
Instructions:
  • Preheat oven to 180°C/160°C fan-forced. Heat oil in a skillet, then sauté onion and bacon until onion is soft, about 3 to 5 minutes.
  • Spread the pasta evenly in a 10-cup ovenproof dish. Add the onion mixture, mushrooms, bell peppers, pasta sauce, basil, and 1 1/2 cups of cold water. Stir well to mix everything together. Season with salt and pepper to taste. Cover the dish tightly with foil.
  • - Bake for 20 minutes. - Pour in 1/2 cup hot water and cover. - Bake for additional 20 minutes. - Remove cover, sprinkle with cheese, and bake for 15 minutes until cheese is melted and golden, and pasta is tender. - Serve with salad leaves.
