Transform fresh lasagne sheets into a mouthwatering pizza ravioli dish!
Ingredients:
  • 40.00 ml pitted kalamata olives, finely chopped
  • 25g mozzarella cheese, finely chopped
  • 2 slices prosciutto, finely chopped
  • 50g fresh ricotta
  • 4 fresh lasagne sheets
  • 33.30 gm tomato paste
  • 375.00 ml panko breadcrumbs
  • 1 egg
  • 64.38 gm milk
  • Vegetable oil, for shallow-frying
  • Baby rocket, to serve
  • Lemon halves, to serve
Instructions:
  • Combine olive, mozzarella, prosciutto, and ricotta in a bowl. Season with pepper and mix thoroughly.
  • Cut the lasagne sheets into long strips, then cut each strip in half. Boil the pasta in batches in salted water for 30 seconds. Transfer to a paper towel-lined plate using a slotted spoon and let cool slightly.
  • Lay out a piece of pasta on a clean surface. Spread 1/4 teaspoon of tomato paste on one half of the pasta. Top with 2 teaspoons of ricotta mixture. Carefully fold the pasta over to create a seal, then press the edges together firmly and trim any excess. Repeat with the rest of the pasta and ricotta mixture.
  • Spread breadcrumbs on a plate. Combine egg and milk in a shallow bowl. Dip each ravioli in the egg mixture, then coat with breadcrumbs. Place on a plate and continue until all ravioli are coated.
  • In a medium frying pan over medium-high heat, fry ravioli in batches for 2 to 3 minutes per side until golden and cooked through. Drain on a paper towel-lined plate and serve with rocket and lemon.
