Elevate your pizza game by using portabello mushrooms as a flavorful crust in this vegetarian pizza-style dish.
Ingredients:
  • 2 large portobello mushroom caps
  • 0.5 cup diced tomatoes
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh basil
  • 2 cloves garlic, chopped
  • 1 pinch dried parsley, or to taste
  • 1 pinch red pepper flakes, or to taste
  • 4 ounces shredded pepperjack cheese
  • 4 ounces shredded mozzarella cheese
  • 2 tablespoons sliced black olives, or to taste
  • 1 tablespoon Italian-style seasoned bread crumbs, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C) and spread the mushrooms in a baking dish.
  • In a large skillet over medium heat, combine tomatoes, balsamic vinegar, olive oil, basil, garlic, parsley, and red pepper flakes. Stir and cook until heated through, about 5 to 10 minutes.
  • Spread a generous amount of the tomato mixture over each mushroom. Sprinkle a blend of pepperjack and mozzarella cheeses over the tomato mixture; then add black olives and a sprinkle of bread crumbs on top.
  • Bake in the oven until golden brown and crispy, approximately 25 minutes.
