Deliciously tender classic Italian waffle cookies, easy to customize and bake on a special iron.
Ingredients:
  • 3 large eggs
  • 0.75 cup white sugar
  • 0.5 cup butter, melted
  • 1 tablespoon vanilla extract
  • 1.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons vegetable oil, or as needed
Instructions:
  • In a large bowl, whisk eggs and sugar until thick. Mix in melted butter and vanilla. Combine flour and baking powder, then fold into the batter until smooth.
  • Preheat the pizzelle iron and lightly brush with oil. Spoon one tablespoon of batter into each circle on the iron. Adjust batter amount and baking time as needed. Bake until steam stops, about 20 to 45 seconds. Gently remove cookie from the iron and continue with the rest of the batter.
  • Allow the dish to fully cool before transferring it to an airtight container.
