Make delicate snowflake-patterned Italian cookies using a pizzelle iron, perfect for Christmas or any occasion.
Ingredients:
  • 6 eggs
  • 1.5 cups white sugar
  • 1 cup butter, melted
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 3.5 cups all-purpose flour
  • 4 teaspoons baking powder
Instructions:
  • In a medium bowl, use an electric mixer to beat the eggs until light. Add sugar, butter, lemon zest, and vanilla, mix thoroughly. Gently fold in the flour and baking powder until combined.
  • Preheat pizzelle iron. Spoon batter onto the center of the patterns, close the lid, and cook for approximately 30 seconds. Adjust as needed based on the first cookie. Gently remove and cool cookies on wire racks.
