Unbelievable cake pops.
Ingredients:
  • 450g iced chocolate mud cake
  • 62.50 ml ready-made milk chocolate frosting
  • 20.00 ml orange sprinkles
  • 20.00 ml yellow sprinkles
  • 20.00 ml blue sprinkles
  • 20.00 ml purple sprinkles
  • 20.00 ml purple hundreds and thousands
  • 20.00 ml green hundreds and thousands
  • 275g white chocolate melts
  • 100g white chocolate melts, melted, extra
  • 2 rainbow sour straps, to decorate
  • Small white and green star sprinkles, to decorate
Instructions:
  • Crumble the cake, icing and all, in a food processor until fine crumbs form. Transfer to a bowl and mix in the frosting until fully combined. Then, scoop level tablespoons of the mixture and roll into balls. Place them on a baking tray lined with parchment paper. Freeze for 30 minutes or until solid.
  • Prepare sprinkles and hundreds and thousands in separate shallow dishes. Melt melts in a microwave-safe bowl, stirring every 30 seconds until smooth. Dip lollipop sticks in melted chocolate, then insert halfway into cake balls. Dip cake balls in melted chocolate, tap off excess, roll in sprinkles, and set in polystyrene to freeze for 30 minutes until firm.
  • Trim the sour straps into colored strips with scissors to fit around the cake pops. Put the extra melted chocolate in a snap-lock bag. Cut off a corner and pipe chocolate along one side of a colored strip. Wrap it around one cake pop. Repeat with the remaining strips. Attach stars to plain cake pops with some melted chocolate. Serve.
