Poached pears in cranberry syrup

Easy yet elegant poached pears make a stunning dessert.
Ingredients:
  • 750ml (3 cups) cranberry juice
  • 125ml (1/2 cup) dry red wine
  • 55g (1/4 cup) caster sugar
  • 2 whole star anise
  • 2 x 7cm cinnamon sticks, halved
  • 4 just-ripe beurre bosc pears, peeled
Instructions:
  • In a medium saucepan over low heat, gently mix together the cranberry juice, wine, sugar, star anise, and cinnamon until the sugar dissolves, about 5 minutes. Add the pears, cover, and simmer for 1 hour, turning occasionally, until tender. Remove from heat.
  • Transfer the pears to a heatproof glass or ceramic bowl using tongs. Increase heat to high and bring the cranberry mixture to a boil, stirring occasionally, until slightly thickened, approximately 5 minutes. Pour the mixture over the pears and let it cool for 10 minutes. Cover with plastic wrap and refrigerate for 4 hours before serving.
  • Serve the pears in bowls drizzled with the cranberry syrup for immediate enjoyment.
