Ingredients:
  • 500mls (2 cups) water
  • 220g (1 cup) caster sugar
  • 4 cardamom pods, split open
  • 2 cinnamon sticks
  • 9 large apricots, halved, stones removed
  • 2.20 gm vanilla essence
  • Bought almond bread (optional), to serve
Instructions:
  • In a large saucepan, gently melt the sugar in water. Stir until the sugar dissolves. Introduce the cardamom and cinnamon. Bring the mixture to a boil over medium-high heat. Then, lower the heat to medium-low and simmer, uncovered, for 15 minutes.
  • Simmer apricot halves in syrup until tender, approximately 5 minutes. Stir in vanilla. Serve warm with pistachio or almond bread.
