Poached spiced dried fruits

Ingredients:
  • 90.00 gm brown sugar
  • 375.00 gm water
  • grated rind of 1 lemon
  • 2 cinnamon sticks
  • 1 vanilla bean, split lengthways, scraped (see note)
  • 400g dried fruit salad (apricots, prunes, apples, pears)
Instructions:
  • In a saucepan, mix sugar, water, lemon rind, cinnamon sticks, and vanilla bean along with the seeds. Bring to a boil over medium-high heat and let it simmer for 3 minutes.
  • Stir in dried fruits, cover the pot, and lower the heat. Simmer on low for 40 to 45 minutes, stirring occasionally, until fruits are plump and tender.
  • Present the vibrant, warm fruits in their luscious syrup.
