Irresistible polar bear cheesecake truffles with white chocolate coating.
Ingredients:
  • 8 ounces cream cheese, softened
  • 0.33 cup powdered sugar
  • 0.5 teaspoon vanilla extract
  • 0.13 teaspoon almond extract
  • 1 pinch salt
  • 1 pinch ground nutmeg
  • 1.33 cups finely ground graham cracker crumbs
  • 12 ounces white chocolate, chopped
  • 40 white chocolate chips
  • 20 white candy melts
  • 2 tablespoons chocolate chips
  • 20 mini candy-coated chocolate pieces (such as mini M&Ms®)
Instructions:
  • Using an electric mixer, blend cream cheese, powdered sugar, vanilla, almond extract, salt, and nutmeg until smooth. Stir in graham cracker crumbs until well mixed. Chill covered in the refrigerator for about 1 hour before serving.
  • Prepare a baking sheet with parchment paper. Take the truffle filling mixture out of the fridge. Using a tablespoon, scoop out the mixture and shape into a ball. Arrange the balls on the baking sheet. Continue until all the filling is used. Chill in the fridge for approximately 30 minutes.
  • In a small microwave-safe bowl, add the chopped white chocolate. Microwave at 50% power until melted, stirring every 30 seconds, for 1 to 2 minutes.
  • Take the truffle balls out of the fridge. Using a fork, dip each truffle filling ball into the melted white chocolate until fully coated. Remove any excess chocolate by tapping gently. Place the truffle back on the parchment lined baking sheet. Press a white chocolate candy melt onto the front of the truffle to create the bear's muzzle, holding it briefly to secure. Add two white chocolate chips on top of the truffle for the ears. Repeat with the rest of the truffles. Let the truffles set at room temperature for approximately 10 minutes.
  • Melt dark chocolate chips in a small microwave-safe bowl at 50% power for about 1 minute, stirring every 30 seconds. Transfer melted chocolate into a piping bag with a small hole at the end. Pipe two eyes just above the muzzle on each truffle. Attach a mini chocolate-coated candy as the nose with a dot of melted chocolate on a white candy melt, holding it briefly to secure. Repeat for all truffles.
  • Chill truffles in the fridge for a minimum of 30 minutes until set. Enjoy right away or refrigerate for up to 5 days.
