Spicy blackberry pie with jalapenos for a summer twist. Recipe for homemade pie crust provided.
Ingredients:
  • 4 cups blackberries
  • 0.25 cup honey
  • 2 jalapeno peppers, sliced
  • 1 tablespoon lemon juice
  • 1.5 cups brown sugar, divided
  • 3 tablespoons cornstarch
  • 2.5 cups all-purpose flour, or as needed
  • 1 cup butter, cubed
  • 0.25 cup ice water, or as needed
  • 1 cup quick-cooking oats
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and pop a baking sheet on the bottom rack.
  • In a large bowl, mix together blackberries, honey, jalapeno peppers, and lemon juice. In a separate bowl, combine 1/2 cup brown sugar with cornstarch, then stir into the blackberry mixture until the brown sugar mixture is fully dissolved.
  • In a large bowl, combine flour and 1/2 cup brown sugar. Use a pastry blender or food processor to cut butter into the mixture until pea-sized balls form. Add ice water and mix by hand until dough is well combined, adding more flour if sticky or a little water if too dry.
  • Divide the dough in half and roll each portion into a 9-inch circle on a generously floured surface. Gently press one circle into a 9-inch pie dish.
  • Remove the jalapeño peppers from the blackberry mixture and discard. Carefully pour the blackberry mixture into the pie crust, ensuring there is a 1/4-inch space between the top of the filling and the edge of the pie crust.
  • Combine oats and 1/2 cup brown sugar, then sprinkle over blackberry filling. Top with second pie crust, trim excess, seal edges, and make 2 slits on top for ventilation.
  • Place the pie on the middle rack of the oven, ensuring it is centered over a baking sheet on the lower rack to catch any drips. Bake until the crust begins to turn golden, approximately 25 minutes. Lower the temperature to 350 degrees F (175 degrees C) and continue baking until the entire crust is a deep golden brown, for about 40 more minutes.
