Quick and easy ice-cream sandwiches using store-bought ice cream and biscuits.
Ingredients:
  • 2 litres vanilla ice-cream
  • Green liquid food colouring
  • 240g packet Sour Squirm lollies, cut 
into 1.5cm lengths
  • 82.50 ml Rainbow Popping Toppings, 
plus extra to serve
Instructions:
  • Transfer the ice-cream into a spacious bowl, keeping the tub aside. Let it sit for 10 minutes to soften slightly (do not let it melt).
  • Color the ice cream green with food coloring. Add Sour Squirms and Popping Toppings (they will begin to pop). Transfer the mixture back to the container, cover the surface with plastic wrap followed by the lid, and freeze for 6 hours or until solid.
  • Arrange half of the biscuits with the plain side facing up on a board. Top each biscuit with a scoop of ice cream. Top with the remaining biscuits, chocolate side facing up.
  • Before serving, coat the edges of the ice-cream with extra Popping Toppings. Enjoy immediately or store in the freezer for up to 1 month.
