Fried cox apples with cinnamon sugar

Cox's orange pippin apples are versatile for both cooking and snacking with a perfect balance of crunch and juiciness.
Ingredients:
  • 1 lemon
  • 250 g unsalted butter
  • 4 Cox orange pippin apple
  • 4 tablespoons caster sugar
  • apple juice, cider or calvados optional
Instructions:
  • - Boil butter in a small pan to clarify it, then strain it through a coffee filter-lined sieve into a container. - Slice each apple into 8 pieces, then sprinkle with lemon juice to prevent browning. - Heat clarified butter in a non-stick pan, add apple pieces in a single layer, and cook until undersides are golden. - Mix sugar and cinnamon, then sprinkle over apple slices. Caramelize them quickly. - Transfer apples to a dish, deglaze the pan with apple juice, cider, calvados, or water, and pour over the apples. - Serve with crème fraîche.
