Pork and garlic dumplings

Ingredients:
  • 250g pork mince
  • 5 garlic shoots, finely chopped
  • 2cm piece ginger, finely chopped
  • 1 long red chilli, deseeded, finely chopped
  • 1/2 x 227g can water chestnut slices, drained, finely chopped
  • 10.60 gm light soy sauce
  • 4.00 gm brown sugar
  • 40.00 ml Chinese rice wine
  • 2 tsp sesame oil
  • 1 egg, lightly beaten
  • 30 gow gee wrappers
  • 131.25 gm light soy sauce
Instructions:
  • Combine mince, garlic shoot, ginger, chilli, water chestnut, soy sauce, sugar, rice wine, sesame oil, and egg in a bowl, stirring until well mixed.
  • Lay out the wrappers. Add 2 teaspoons of mince mixture onto one half of each wrapper. Moisten edges with cold water. Fold the other half over the filling and press to seal.
  • Steam dumplings in batches for 15 minutes until tender. Transfer to a plate and cover to keep warm.
  • Next, prepare the dipping sauce by mixing soy sauce and rice wine in a bowl. Finally, serve the dumplings with the dipping sauce.
