Pork and rice meatball bake

Elevate baked meatballs with a touch of flavorful feta.
Ingredients:
  • 750g pork mince
  • 1 small brown onion, finely chopped
  • 100.00 gm white long-grain rice, well rinsed
  • 187.50 ml flat-leaf parsley leaves, chopped
  • 1 tsp dried oregano
  • 2 x 400g cans diced tomatoes
  • 255.00 gm chicken style liquid stock
  • 80g feta cheese, crumbled
  • Rocket leaves, to serve
Instructions:
  • Preheat your oven to a toasty 200°C and generously grease a 10-cup capacity ovenproof dish.
  • Mix together the mince, onion, rice, parsley, cumin, and oregano. Season with salt and pepper. Shape into tablespoon-sized balls and arrange in an ovenproof dish.
  • Mix diced tomatoes and beef stock in a pitcher. Pour the mixture over the meatballs in a baking dish. Bake without covering for 50 to 60 minutes, or until the meatballs are fully cooked.
  • Liberally scatter feta cheese on top of the meatballs. Bake without covering for about 10 minutes or until the cheese is just starting to melt. Enjoy with fresh rocket leaves on the side.
