Pork Chop Dinner with Rice and Veggies

Delicious meal ready in 30 minutes, all cooked in one skillet for easy serving.
Ingredients:
  • 6 pork boneless loin chops, 1/2 inch thick (1 1/4 lb)
  • 2 cans (10 3/4 oz each) condensed reduced-fat cream of mushroom soup
  • 1 bag (1 lb) frozen baby peas, carrots, pea pods and corn, thawed and drained
  • 1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
  • 2 cups uncooked instant brown rice
Instructions:
  • In a 12-inch nonstick skillet coated with cooking spray, cook the pork over medium heat for about 5 minutes, turning once, until nicely browned. Transfer the pork to a plate and cover to keep warm.
  • In a skillet, bring the soup, vegetables, and broth to a boil while stirring occasionally. Add rice, reduce heat, cover, and simmer for 5 minutes.
  • Lay the pork on top, then cover and simmer for an additional 5 minutes until the pork is slightly pink in the center and the rice is tender.
