Savory pork chops cooked with hearty wild rice, sweet corn, and flavorful tomatoes for a quick and delicious weeknight dinner.
Ingredients:
  • 2 tablespoons butter
  • 4 boneless pork chops
  • 1.25 cups water
  • 1 (6 ounce) package long grain and wild rice mix with herbs
  • 1 (15.25 ounce) can corn, undrained
  • 1 (14.5 ounce) can diced Italian-style tomatoes, undrained
Instructions:
  • Melt butter in a skillet over medium heat. Cook pork chops until they are fully cooked, for 10 to 15 minutes. Slice the pork chops into bite-sized pieces after removing them from the skillet.
  • In a skillet, combine water, long grain and wild rice mix with herbs, stirring well. Add pork chop pieces on top of the rice, then pour corn over the pork chops and finish with tomatoes. Cover the skillet and simmer for 30 to 40 minutes, or until the rice is tender and liquid is absorbed.
