Pork Chops in Country Onion Gravy

Classic pork chops with onion gravy - a comforting skillet dinner from Betty Crocker's Heart Healthy Cookbook.
Ingredients:
  • 4 boneless pork loin chops (about 1 pound)
  • 2 cups chopped onions
  • 1 cup Progresso™ beef broth (from 32 oz carton)
  • 1/8 teaspoon pepper
  • 1/3 cup fat-free (skim) milk
  • 2 tablespoons Gold Medal™ all-purpose flour
Instructions:
  • Spray a 12-inch nonstick skillet generously with cooking spray and heat over medium-high heat. Cook the pork chops in the skillet for about 6 minutes, flipping once, until both sides are golden brown. Remove the pork from the skillet and cover to keep warm.
  • Lower the heat to medium. Add onions to the skillet and cook for 3 minutes. Stir in the broth and pepper. Return the pork to the skillet and spoon the onion mixture over the pork. Cover tightly and simmer for 12 minutes or until the pork is no longer pink and the meat thermometer inserted in the center reads 160°.
  • In a small bowl, combine milk and flour. Pour mixture into a skillet and cook for 2 to 3 minutes, stirring constantly until it thickens.
