Savory pork chow mein with veggies, soy sauce, bean sprouts, and almonds in flavorful broth.
Ingredients:
  • 2 tablespoons oil
  • 2 cups 1-inch pieces pork
  • 1.5 cups chopped onion
  • 0.25 pound mushrooms, sliced
  • 2 cups chicken broth
  • 2 cups sliced celery
  • 0.25 teaspoon black pepper
  • 2 cups fresh bean sprouts
  • 0.5 cup sliced almonds
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons cornstarch
Instructions:
  • In a skillet, heat oil over medium heat, then sauté pork until lightly browned, about 5-7 minutes. Add onion and mushrooms, cook until slightly tender, around 2-3 minutes. Stir in chicken broth, celery, salt, and black pepper; bring to a boil. Cover and simmer on medium-low heat until pork is tender, about 15-20 minutes.
  • Combine the bean sprouts and almonds with the pork mixture. In a bowl, whisk together soy sauce and cornstarch until smooth, then stir into the pork mixture until thickened for 2 to 3 minutes.
