Elevate pork chops with vibrant peach, onion, and mint salsa for a burst of flavor.
Ingredients:
  • 4 Pork Forequarter Chops
  • 4 peaches, stoned, chopped
  • 1/2 small red onion, quartered, thinly sliced
  • 125.00 ml coriander leaves
  • 125.00 ml mint leaves
  • 21.00 gm lime juice
  • Coles Australian 4 Leaf Salad, to serve
Instructions:
  • Massage half of the oil into the pork and season generously. In a large frying pan over medium-high heat, sear the pork for about 3 minutes on each side until beautifully browned and fully cooked. Place the pork on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • In a medium bowl, mix together the peach, onion, coriander, mint, lime juice, and remaining oil. Season the mixture. Serve the pork with the peach salsa and salad leaves.
