Portuguese Kale Soup

Hearty soup with pea beans, chorizo, cabbage, kale, and potatoes cooked low and slow.
Ingredients:
  • 0.5 pound dried white pea beans
  • 0.5 pound chorizo sausage, thinly sliced
  • 1 pound beef soup bones
  • 1 quart water
  • 1 medium head cabbage, chopped
  • 2 bunches kale - rinsed, dried and chopped
  • 5 potatoes, peeled and cubed
  • 1 quart hot water or as needed
Instructions:
  • Cover the beans with water, allowing them to soak for 8 hours or overnight.
  • In a large pot, combine drained beans, flavorful chorizo, soup bones, and 1 quart water (or more to cover). Simmer over medium heat until beans are just tender, about 1 hour.
  • Add cabbage, kale, and potatoes to the pot, then pour in enough hot water to cover them. Cook for 20 minutes or until the potatoes are tender. Season with salt and pepper to taste.
