Potato and Ground Beef Gratin

Indulge in a cozy beef and potato casserole in rich Cheddar sauce.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons butter or margarine
  • 1 small onion, chopped (1/4 cup)
  • 3 tablespoons all-purpose flour
  • 2 teaspoons chopped fresh thyme leaves
  • 3 cups milk
  • 3 cups shredded mild Cheddar cheese (12 oz)
  • 6 medium white potatoes (2 1/2 lb), peeled, thinly sliced (6 cups)
Instructions:
  • Preheat oven to 375°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Cook the beef with a sprinkle of salt and pepper in a 10-inch skillet over medium-high heat for 5 to 7 minutes, stirring occasionally, until the beef is cooked through; then drain any excess fat.
  • In a 3-quart saucepan, gently melt butter over a cozy medium-low heat. Add onion and cook for about 2 minutes until tender, stirring occasionally. Sprinkle in flour and cook for 1 to 2 minutes, stirring constantly until it becomes bubbly. Remove from heat and gracefully stir in thyme.
  • Combine milk with the onion mixture and heat until boiling, stirring constantly. Boil and stir for 1 minute, then remove from heat. Mix in 2 cups of cheese until melted.
  • Layer half of the potatoes in a baking dish, followed by the beef, then the remaining potatoes. Drizzle the cheese sauce over the top layer of potatoes.
  • Cover and bake for 45 minutes until the potatoes are tender. Sprinkle the remaining 1 cup of cheese over the top and bake uncovered for an additional 15 to 20 minutes, or until the top is golden brown and bubbly. Allow the dish to rest for 5 minutes before serving.
