Easy Mushroom and Ground Beef Skillet

Savory roasted potato and mushroom skillet meal with creamy soup.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1/4 cup chopped onion
  • 1 bag (19 oz) Value Size frozen roasted potatoes with garlic & herb sauce
  • 1 can (18 oz) Progresso™ Vegetable Classics creamy mushroom soup
  • 1 jar (4.5 oz) sliced mushrooms, drained
  • 1 cup shredded mozzarella cheese or Oaxaca cheese (4 oz)
  • Chopped fresh parsley
Instructions:
  • In a wide skillet, sear the beef and onion over medium-high heat for 5 to 7 minutes, stirring occasionally, until fully cooked. Remove excess fat.
  • Toss in the frozen potatoes and cook for 8 to 10 minutes, stirring often, until potatoes are tender. Introduce the soup and mushrooms into the mix and continue cooking and stirring until everything is piping hot.
  • Sprinkle cheese on top and cover to cook for about 2 minutes, or until the cheese is melted. Finish by sprinkling with parsley.
