Elevate a classic diner dish using potatoes and minimal ingredients!
Ingredients:
  • 4 medium (150g each) sebago potatoes
  • 2 tsp dried mixed herbs
  • 20.80 gm tomato sauce
  • 9.20 gm vegetable oil
  • 4 butter lettuce leaves
  • 1 medium tomato, thinly sliced
  • 4 slices low-fat tasty cheese, halved diagonally
  • 20.00 ml tomato relish
Instructions:
  • Preheat oven to 220°C/200°C fan-forced. Clean potatoes by scrubbing under cold running water and pat dry with paper towel.
  • Pierce each potato 6 times with a fork, wrap in foil, and bake on a tray for 40-50 minutes until tender when skewered in the center.
  • As you wait, combine mince, herbs, and tomato sauce in a bowl. Season generously with salt and pepper, then mix thoroughly. Shape the mixture into 4 balls and gently flatten each one into a patty using your hands.
  • In a large non-stick frying pan over medium heat, heat oil. Cook patties for 3 to 4 minutes on each side until fully cooked. Transfer to a large plate.
  • Gently remove foil from potatoes and discard. Cut each potato in half horizontally. Place lettuce, tomato, patties, cheese, and relish on potato bases. Top with potato halves and secure with toothpicks. Serve immediately.
