Elevate shepherd's pie with a cheesy, crunchy potato gem topping.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 40g (1/4 cup) plain flour
  • 625ml (2 1/2 cups) chicken stock
  • 41.60 gm tomato sauce
  • 36.60 gm worcestershire sauce
  • 140g (1 1/2 cups) frozen mixed vegetables
  • 1/2 packet (about 30) frozen potato gems
  • 100g (1 cup) grated four cheese blend
  • Chopped fresh continental parsley, to serve
Instructions:
  • In a large ovenproof frying pan over medium heat, heat the oil. Sauté the onion until soft, about 4 minutes. Increase the heat to high, add the mince, and cook until browned, about 4 minutes, breaking up any lumps with a wooden spoon.
  • Sprinkle the flour over the mince and cook, stirring, for 1 minute. Slowly pour in the stock, stirring constantly until thickened. Mix in the tomato sauce and Worcestershire sauce. Simmer for 10 minutes until the sauce reduces. Add the vegetables and stir.
  • Preheat the oven to 200C/180C fan forced. Layer the potato gems over the mince mixture, then generously sprinkle with cheese. Bake until golden brown, about 20 minutes. Finish with a sprinkle of fresh parsley before serving.
