Protein-packed crepes boosted with cricket flour, coconut butter, nutritional yeast, and non-dairy milk.
Ingredients:
  • 1 cup cricket flour
  • 0.5 cup brown sugar
  • 2 tablespoons nutritional yeast
  • 1 pinch salt
  • 2 tablespoons water
  • 1 tablespoon flaxseed meal
  • 2 cups soy milk
  • 1.5 cups almond milk
  • 0.5 cup coconut butter, softened
  • 0.25 cup maple syrup
  • 2 teaspoons vanilla extract
Instructions:
  • Combine all-purpose flour, cricket flour, brown sugar, nutritional yeast, and salt in a large bowl, blending them together until fully incorporated.
  • Combine water and flaxseed meal in a separate bowl and let it thicken for about 5 minutes. Add soy milk, almond milk, coconut butter, maple syrup, and vanilla extract. Pour this mixture over the flour blend and mix with an electric mixer until the batter is smooth.
  • Allow the batter to sit and thicken for a minimum of 1 hour.
  • Preheat a nonstick skillet over medium heat. Pour a 1/4 cup of batter into the skillet and swirl it to spread out thinly. Cook until the top appears dry and the bottom is light brown, for about 1-2 minutes. Gently loosen the edges with a spatula, flip, and cook the other side until light brown, around 1 minute. Repeat with the rest of the batter.
