Prawn, watermelon and snow pea leaf salad

Elevate your prawn salad with the refreshing addition of sweet watermelon.
Ingredients:
  • 60ml lime juice
  • 60ml sushi vinegar
  • 15g palm sugar
  • 1/2 tsp sesame oil
  • 20 (about 640g) medium cooked tiger prawns, peeled, deveined
  • 750g seedless watermelon, cut into wedges
  • 1000.00 ml snow pea leaves
  • 40g ginger
  • 1/2 small red onion, thinly sliced
  • 125.00 ml coriander leaves
Instructions:
  • In a small bowl, mix lime juice, vinegar, and palm sugar together. Then, add sesame oil and whisk until well combined.
  • In a spacious bowl, combine prawns and all listed ingredients. Drizzle with dressing and gently toss. Portion onto plates and enjoy.
